Preparation

reserve 1/2 cup of the kidney bean liquid.

In a bowl, mash 1/2 cup of the beans with 1/2 cup of liquid reserved.

Crush the garlic cloves

Coarsely chop the tomato.

Coarsely chop the arugula.

Finely slice the shallots.

Finely chop the flat-leaf parsley.

Place the mashed beans, chicken broth, chopped tomatoes, chopped arugula, sliced shallots, chopped parsley in a large saucepan.

Add the lemon juice, salt and pepper (to taste) to the saucepan.

Warm the bean mixture, covered, over a low heat for 10 minutes.

Meanwhile, preheat the grill or stove top grill pan and brush with olive oil.

Brush grill or grill pan with olive oil.

Grind black pepper over the cod fillets.

Cook the cod for 8 minutes, turning once.

Serve the warm bean salad as a bed for the cod fillets, and garnish with extra

arugula leaves.

I enjoyed the meal. The warm bean salad had a new and tangy taste

for me. I think it was mainly the parsley and I may have used too

much. The recipe calls for 1/4 bunch. I may have put just a bit

more than that, but the bunch was huge. Next time I make it, I will

add a tad less parsley.



The warm bean salad portion is large -- about 8 oz of beans plus

1/4 of a tomato; 1/4 bunch of arugula; etc. I froze the remaining 3

portions.



I cooked the cod the way the recipe said, but next time I will spice it

up a bit for me. Also, my cooking time was a bit longer than the 8

minutes the recipe called for. I also cooked the warm bean salad a

lot longer than the recipe said (which may account for some of the

tangy flavor that I liked so much).



All in all, I thought it was pretty good.

To blog or not to blog: that is the question:

Well, I say ... Whether 'tis nobler in the mind to
suffer The slings and arrows of endless emails, Or
to take up blogspace and whistle in the wind ...

I could go on, but who cares. I could cite the
advantages of blogs, but then I could also cite the
disadvantages.

I am going to do neither.

This is where I am going to post some low carb
stuff and some Jerry stuff. Maybe later, I'll
add some dancing girls, but for now just low carb
stuff and Jerry Stuff.

To begin with, I will go back and post the low carb
cocktail reviews I have done so far from the "low carb
cocktail" book Ted got me. Then I'll add some reviews of
some recipes from the "Glycemic Index Cooking made easy"
book Kay got me. Along the way I'll add trivia, etc. I
don't know with what speed or frequency I will add things
to the blog.

How will you know that I have added something to the blog?

Good question! Many blogs are just there and you have
to go and check them from time to time to see if anything
has changed. I could do that. But I think I will send
an email out each time I make a change. But wait you say
... if you are going to send out an email, why don't you
just put the information in the email?

All I can do is quote a famous anonymous blogger who said
"It's not nice to question blog logic". Another famous
blogging saying is "Don't Mess With Bloggers".

Actually there are reasons and alternatives. I will
chatter (blog) about them at some later date here.
